I know exactly what you mean, but activity in pursuit of what benefit? How much of what we do actually produces something of real value and how much is simply admin or busywork? Is is all worth being so frantic over?
I recently had to take couple of days off from work with stress, I’d lost my head a little in the mess that we call the modern world and allowed attachments to form a little too much.

Exactly, often it is not the extent of activity that causes problems, but simply the quality and use of it. I know some tremendously active people, who because of the nature of what they do and the enjoyment they reap from it are enlivened and energized by it.
